Description

DescriptionStaff member in the slaughter room at the Bremer River Abattoir. Specialising in beef, the Bremer River Abattoir was processing 1500 carcasses a week within a year of its 1958 opening. After resting in the stockyards, the cattle would pass through a spray booth where they would be washed by streams of high pressure water. After being humanly killed, known as 'knocking', the carcass were 'dressed'. Dressing was the process where the head, tail, legs (below the knees), skin and internal organs were removed. After this, the carcasses were washed with warm water sprays, weighed, graded and moved to cold rooms for chilling. The Bremer River Abattoir was also equipped with a Boning Room which produced boneless beef for America and the United Kingdom. References (offline)City of Ipswich Queensland, 1859-1959
